We have been playing with Exchange since 2003, but we never had a cloud to migrate to. Well now you do, so if you know exchange pretty well, then you should breeze through the online version. Click, click click through those screens to find out where everything is hidden. And I mean everything. Below are some good info on your On-Premis exchange clients and your migration options.

SharePoint is the glue that keeps you and your clients tight. It will MAKE YOU MONEY$$.
Offer them a free site. Create a very simple site with their logo to play with.
Give them a rate sheet for customization and management and read as much as you can.
Play with your own site. Break it, rebuild it, add users. Importantly, play with permissions.
